Filippi is always looking for new tastes and sophisticated flavors for the most demanding palates. A panettone that starts well recognizable with the traditional dough of the classic panettone Filippi, but that ends up surprising thanks to the addition of fleshy and soft cloves of candied peach and unexpected little macaroons.

The natural charge of freshness and sweetness of peach is combined with a voluptuous melt: at first with a sweet taste and then, as soon as you meet the macaroon, with a slightly bitter aftertaste.

An intriguing combination of sweet and slightly bitter, to enjoy with idle indulgence.

Filippi uses only the best natural ingredients and NO artificial flavoring. For instance:

Natural leaven is the most important ingredient, absolutely irreplaceable, the signature at the bottom of a work of art. Filippi's mother dough is the unique imprint that makes Filippi products authentic. Filippi's mother dough has been kept alive for more than forty years and preserved with care and attention, the way one would care for a living thing, as sourdough is.

Filippi only uses fresh eggs produced by free-range hens.

Filippi uses an optimal natural sweetener, honey, dosing it with a lower amount of sugar. Filippi's honey comes from bees that are treated ecologically and fly on the hillsides of the Po Valley, in the Regional Park of the Euganean Hills, Padova.

Vanilla is a particularly important ingredient for them: it is the fundamental natural flavor that rounds off and completes the taste of their products. The final touch that only a flower can give! Filippi's Planifolia Bourbon vanilla powder comes from organic and certified fair trade cultivations in Madagascar.

All fruits Filippi uses are natural. Through the productive chain our raw material is strictly controlled and carefully monitored, then processed with the utmost care. The candying process takes place naturalli, without mechanical pressures, but simply under atmospheric pressure. Candying is a very long process, which takes weeks, but it maintains the peels very soft and allows the fruits to maintain a strong flavor.

Cutting and dicing operations are performed rigorously after canding. This is particularly important for our candied oranges and lemons, that preserve a thick but soft peel, rich in essential oils with an unmistakable fragrance.
