Moving their bees in the Langhe hills, in the surroundings of Alba, all the way up to the Alps, Mariangela Prunotto obtains this wanderful and tasty honey.
Honey is a sugary substance produced by bees following the transformation of the nectar of flowers.Among the different types of honey that of black locust (Acacia) is undoubtedly the most widely known and appreciated in Italy. It is a characteristic honey that has a light color, a liquid physical state, a light and delicate smell and taste.
At the organoleptic level it is generally liquid; it may eventually appear cloudy due to the formation of crystals, without however achieving complete crystallization.
The color is always very light, from almost colorless to straw yellow.
The smell is light, reminiscent of flowers or slightly fruity. The flavor is decidedly sweet, with very slight acidity. The aroma is very delicate, typically vanilla, candied, not very persistent and with no aftertaste.
It is exceptional when used as a common natural sweetener thanks to its "lightness" of flavor and is definitely enhanced when tasted with blue or blue cheeses such as Roquefort or Gorgonzola.
