Giuliano’s Classic carnaroli rice is made using the mortar and pestle system, from the only mill in the world that produces rice in this old fashioned way.
The mortar and pestle system ensures there is no heat generated as with the machines that scrape the skin off the rice. The rice also retains more of the starch that makes it creamy when cooked, making for a creamier risotto than with industrially processed rice.
